You have two important areas in Paris for guitars, one is more specialised in electric/acoustic guitars in the are near "Place pigalle" (rue victor Massé, rue de Douai). The other area is where you will find the instruments makers (mostly violin but also other instruments) and is located in the "Rue de Rome".

You can visit "Guitarreria" shop (5 rue Edimbourg). They have a lot of beautiful high-end classical or flamenca guitars.
